In the 1980s, Fred Soleimani started as a dishwasher at Arkansas State University — and never looked back. He worked his way up from cook to manager, fell in love with the restaurant business, and opened his first location in 1991 in the Kansas City metro area.
Fred named his restaurants after his daughter, Pegah — a Persian word meaning "dawn" or "very early morning." A perfect name for a breakfast spot. After six Kansas City locations, Fred moved west to San Diego in 2012. By 2014, the first California Pegah's Kitchen was born in San Marcos.
Today, all three North County locations are family run. Fred's wife Sara manages San Marcos, son Nima handles Escondido, and Fred himself runs Vista — carrying on 35+ years of fresh food and great service.
Each Pegah's Kitchen is independently owned and operated by a member of the Soleimani family — keeping the recipes, the care, and the pride entirely in house.
"Pegah" means dawn in Persian. We've been here since the very first light — every single morning.
